A German cheese-speciality of the Frankfurt/Main and Mainz area.
Handcheese was originally shaped by hand. It's made from sour milk and is a pretty stinky fast ripening soft-cheese.
The cheese is marinaded in a sauce of oil, vinegar, small cut raw onions and caraway seeds. This marinade is called the music, but the music also refers to the sounds caused by the digestion of the onions.
It is seved with bread and butter. Beer or appel-wine go along fine with it.
